    1. I love eggplant parmesan and the way I was taught to make it was to bread it, fry it, then bake it with the toppings. My new healthy way is to not bread it or fry it! I simply add to the baking dish add my layers of sauce and light mozzarella cheese. Taste great! Healthiest way to make it.
